Blueberry Coffee Cake

Hello again foodies! I am so excited about this post, for many reasons, but mainly because it is SO delicious! A few days ago I was inspired and on a mission to make blueberry cupcakes, like....really BLUE blueberry cupcakes and frosting. So I set out to Winn Dixie to pick up blueberries and some buttermilk, only to return home and find out that the two pints of berries I purchased (at a hefty price, I might add) were greenish white inside! Being from Maine, where blueberries are the state 'fruit', I had never seen a blueberry that was white inside, and not gushing purple goo. At first I was quite irritated at the fact that they were white and kind of sour but, feeling rude, I did not want to return them either.
Last night I found a blueberry coffee cake recipe and decided it would still be a tasty way to use up most of the berries, and gave it a try. I combined it with a family coffee cake recipe and it was a success. Now, they say you learn something new everyday, what did I learn? I learned last night, that these ugly white-fleshed berries, magically turn blue and ooze purple once cooked!! It just has to be magic, I'm not kidding, I pulled one berry out of the baked cake and squashed it in a paper towel. Purple berry guts everywhere, no white or green remnants in sight! The moral of the story today is: "Don't doubt the 'blue' in the blueberry. It will make its appearance!" While the berries are still a bit more sour than regular wild blueberries, the sugar-crumb filling in this recipe balances it very nicely. So whether for breakfast, dessert, or a snack; enjoy!
Fresh Summer Tomato-Basil Soup

Tonight I made the most amazing tomato soup, and it was from scratch! I've always wanted to make a tomato soup from scratch and have always pushed it off, thinking it would take a long time or be difficult to get the right texture. Well, the right texture, I got, and difficult, it was not! This soup is so perfect and goes along well with my no-fake-all-fresh approach. It even got a 9 on the Hub-O-Meter, (though I think he was being stingy and holding back a 10, 'cause he really loved it...and he dislikes tomatoes!) I made a ton of changes to a recipe I found online and the only ingredient in this soup that was not fresh was some canned fat-free, reduced sodium chicken stock. The recipe makes just about 3 big bowlfuls (though I sorta, maybe filled only 2 bowls with it, it was so good!) so next time I will at least double it. This soup will stay with us forever, an instant favorite!
Checca Sauce

Okay, so where to start?... Right off the bat, this gem of a dish scored a '10' on the Hub-O-Meter on his first bite! Checca, pronounced 'kay-kuh' or as I imagine it, "cake-uh", is an Italian sauce usually made in the summer when tomatoes are at their peak in ripeness. Checca sauce can be included in the culinary meaning of tricolore. Tricolore, refers to the three colors of a flag and is comonly used to refer to different foods and things in Italy. When it comes to Italian food, Tricolore usually refers to the use of tomatoes (red), basil (green) and mozzarella (white). For example, tricolore is most commonly known as a salad. Here it is the mixture of the three as a sauce. Fun Fact: pretty much anything that is considered "Tricolore" can also be considered "caprese" (in the style of Capri). Another interesting detail about checca sauce is that it is an uncooked sauce, tossed with cooked pasta, usually a thin pasta such as spaghettini, Capelli d'angelo (angel hair) or capellini. Though uncooked, this sauce is delicious, QUICK to make, and healthy!
- 1 bag of very ripe cherry tomatoes (12 oz, grape tomatoes will work too, though cherry is best)
- 2-3 scallions (optional)
- 3 cloves garlic (smashed)
- 1-2 oz fresh parmasean cheese, chopped
- 6-8 basil leaves (about 1/3 cup)
- 3 tbsp extra virgin olive oil
- 4 oz fresh mozzarella, cut into small cubes (about 1/4 in x 1/4 in)
- 1/2 tsp each, salt and pepper
- about 8 oz uncooked thin, tubular pasta
2. Meanwhile, cook your pasta, (angel hair takes litteraly about 4 minutes)
3. Transfer tomato mixture to a medium size bowl, add mozzarella, salt and pepper and give it a good stir.
