The Cupcake Book: Creme de Menthe



This next scrumptious creation was inspired by one of my favorite candies that I have loved since I was a child: Andes mints! It turned out amazing, again, one of the best so far. Jon pointed out that they taste like Girl Scouts Thin Mint cookies, and they really do. 
That's probably because they have a grasshopper cookie crumb crust in the bottom. The crust contrasts well with the softness of the cake which a dark chocolate mint cake, and it's topped with a mint/chocolate mint swirled buttercream and of course, an Andes Mint! Just heaven...



The grasshopper crumb crust gets baked for a little while before scooping in the batter


 I love the contrast in colors. They were so hard to resist while photographing!
