What would this Christmas be without a "little" chocolate!?! I was craving fudge pretty bad so I decided to whip some up for the 12 Treats. This recipe turned out really well, but also really sweet (fine by me). Cut it into smaller pieces if you don't want to overdose... Or cut them large...either way! :-)
Chocolate-Walnut Fudge
- 1 & 1/2 cups sugar (may use a bit less next time)
- 1- 7oz. jar/container of fluff (marshmallow creme)
- 2/3 cup evaporated milk
- 1/4 cup butter
- pinch of salt
- 2 cups milk chocolate chips (I used Ghirardelli)
- 1 cup semi-sweet choc. chips (also Ghirardelli)
- 1/2 cups chopped walnuts (was not enough for my tastes, but still great!)
- 1 tsp vanilla
1. Line a pan with aluminum foil. I used a 8x12-ish brownie pan. An 8x8 or 9x9 inch pan will also do. It is also a good idea to have all of your stir-in ingredients pre-measured and ready to go! (ie. choc. chips, nuts etc.) Time will be short once the sugar leaves the stove!
2. Over med-hi heat, mix together the sugar, marshmallow, evaporated milk and butter, until fairly smooth. Bring to a rapid boil (large bubble "pockets" will continuously pop), once at a boil cook for 5 minutes, stirring constantly! Color will caramelize to a nice light brown
3. Remove from heat and quickly mix in the chocolate chips until smooth and melted. Stir in the walnuts and transfer to the lined pan quickly. Spread evenly in pan and refrigerate until set. Fudge should be set in 2-3 hours.
4. Once set, use foil to remove fudge from pan and cut into squares.
